Start with your choice of a fresh Caesar salad with creamy garlic dressing and white anchovies, topped with a parmesan crisp; poached pear-winter beet salad with local greens, curried walnuts and finished with a goat cheese fondue; or a roasted wild mushroom bisque served with chestnuts and pancetta. For your main course, choose from a sweet potato agnolotti pasta with sage brown butter and aged parmesan cheese; seared sea scallops atop pumpkin risotto with candied pecan gremolata and crisp root vegetables; or Brandt beef tenderloin accompanied by a foie gras-short rib hash and parsnip nage, and topped with a distinctive huckleberry sauce.
